Maybe I’m late to the game on this, but I’ve recently discovered that most of the grocery stores I frequent have smartphone apps. You can clip digital coupons from your phone so you don’t have to print them or cut them out of magazines and carry with you. Here in the South East we have Publix Supermarkets. For their digital coupons, all you have to do is create an account and include your phone number, clip the digital coupons to your account, then after you’ve shopped, at the checkout just enter your phone number on the credit card pad and bada-bing you’ve got instant savings!

As is the common theme of the majority of my posts, this recipe is great because of all the ways you can modify it by using your own favorite veggies. I used yellow squash, mushrooms, red onion, spinach, and artichoke. Even the protein can be up to you. I did chicken thighs but you could do chicken breasts, drumsticks, even chicken breast strips. (Full ingredient list at the end of post.) I was also going to add chickpeas but frankly was doing two recipes at the same time and just forgot to add them. I may do it next time I make this but will DEFINITELY be making this again regardless. This is my favorite meal to date- it is seriously so good I cannot believe it’s good for you! I store mine in the fridge for lunch throughout the week and it’s as if letting it sit in the fridge made the dish even more flavorful. I’m ready for lunch tomorrow!

Preheat oven to 425.


Sear chicken thighs on a hot pan for about five minutes on each side, but do not cook completely. Remove chicken and set aside for now.

In the same pan without removing the juices from chicken, cook onions, mushrooms, and garlic for a few minutes. Everything will continue to cook in the oven so you do not need to cook as long as you may normally. Add squash, cook a few minutes more. Then add a handful of spinach, cover and let wilt, remove cover and stir to incorporate, add more spinach and repeat. I used a big enough pan I could just add the entire contents of the bag of spinach at once.

Add 1 cup of chicken broth and let come to a simmer. Remove from heat, and add chicken thighs on top.

Place the pan in the oven for about 15 minutes, or until the chicken reaches an internal temperature of 165.


If storing for the week, let cool for about 20 minutes before distributing into tupperware. If eating for dinner, go ahead and serve and enjoy! If cooking for dinner, a side of couscous or quinoa would be good. In fact, you could add some quinoa at the time you add the chicken broth, above, and let cook in the oven. I may have to try that.


4-6 pieces of chicken of your choice (I used thighs, one package from Winn Dixie)

1 bag of spinach

1 package of mushrooms

2 yellow squash

2 cans of artichoke hearts, quartered

1 red onion

2 cloves of garlic

1 C fat-free chicken or vegetable broth

Egg and Kale Crustless Quiche

The great thing about this recipe is it gets even more nutritious the more veggies you add. And more delicious as well. I used 8 ounces of kale, one sweet onion, 8 eggs and 3/4 cups of part-skim mozzarella cheese. But zucchini, squash, mushrooms, even tomatoes would be really good.. or all of the above.

First, preheat your oven to 400.

Saute onions and add kale. To do 8 oz of kale I had to add, let wilt, add more, then repeat. I wasn’t using any other veggies so I wanted to load up on kale.

Then layer into the baking dish of your choice. Start with the kale and onion mixture and add the cheese on top of that. Mix eight eggs separately and pour on top, and use a fork to gently “stir” the mixture to ensure the eggs are fully incorporated.

I used a smaller baking dish because although both my husband and I cook often, we are cheapos and actually have a limited supply of bakeware. Plus I wanted taller slices, as opposed to larger squares.

Bake for 30-35 minutes, and let cool for a good 20 minutes before attempting to slice and store. If you’re going to cut into and eat it right away, just let cool for about 10 minutes. It will still be piping hot inside. (Note: mine got a little browner than I intended as I put a separate dish in the oven at 425 for the last five minutes of cooking, trying to multi-task.)

Homemade Marinara

Roast 3 cloves of garlic on the stove in a bit of oil, and then add two cans of crushed tomatoes, 1 tbsp each of oregano, salt, and crushed red pepper.  Then I took two sprigs of fresh basil and let simmer for 15 minutes, then took the sprigs of basil out. You could also chop the basil and incorporate. Either way, I suggest you’ve got to keep the basil. 


Avocado Stuffed Meatballs

I am so making these again and again and again! What I love most is since you have the creamy avocado in the center, you don’t even need sauce for these. But hey, sauce it up if you like. (My homemade marinara sauce is in to How-To section.)

First preheat your oven to 400.

Roast some garlic by peeling a few cloves, tear off some foil and place the cloves in the middle of it. Squirt just a tsp of olive oil and sprinkle a bit of s&p, then wrap the foil into a loose ball and roast for about 10 minutes (at 400). Then mince the roasted garlic. And dice an onion. You can saute the onion if you like, I did not. I usually do but was looking for something to give a crunch this time. In the future I will pack these meatballs with raw veggies.  I suggest spinach; it mixes well with meat and keeps it super moist. Plus spinach provides TONS of vitamins your body needs and is a great source of fiber. Sometimes you need to hide your fiber in good food like this.

If you have favorite spices, use them. I used onion powder, Montreal Steak seasoning, crushed red pepper, and cumin. Measurements are below.

Combine these seasonings with Panko, one egg, garlic, onion, and one lb of ground chicken (or turkey). Mix well. I actually suggest using a bit more than 1 lb of meat as my meatballs were super sticky and were difficult to mold.


Take a glob of the meat mixture in one hand, and put a piece or two of avocado in the middle, and wrap the meat mixture around it.


Bake for about 35 minutes, or until the internal temperature reaches 165.

1 tsp onion powder

1 tsp Montreal Steak seasoning

1/2 tsp crushed red pepper

1/2 tsp cumin

Three Ingredient Banana Muffins

You can make these as pancakes by skipping the muffin tin and oven, or follow my directions for a different take on blueberry muffins! The batter is only three ingredients: bananas, eggs, and baking powder (and really, the baking powder is optional. If you’re doing the muffins, I recommend.) I added some cinnamon and blueberries to mine. Blueberries are a really sweet and delicious source of natural fiber, plus pair well with banana.

First preheat your oven to 375.

Start with two eggs and one and a half bananas. Mash the bananas up like you would avocados for guacamole. You won’t get all the lumps out unless you use a blender. But personally, I didn’t mind the lumps- it’s just nanners. Then add the two eggs and mix well.

Add 1/8 tsp baking powder, and cinnamon to taste (I did 1/8 tsp of that, too). The baking powder will clump, so be sure to really mix it well as a big bite of baking powder would not be a pleasant experience. Gross.

At this point, you can make them just like you would regular pancakes. The finished pancake tastes more like a crepe than your usual pancake, but is so delicious. Seriously.

Or you can pour into muffin tins! To do the whole pan I had to do two batches of the above recipe. Add whatever you’d like to the muffins. Chocolate chips, fruit, whatever’s your pleasure. I did blueberries. But just thinking about the chocolate chips… I might do that next!

Bake in the oven at 375 for 25 minutes, or until they feel firm when you press on the top.

Serve warm! And with a paper towel, the blueberries are super juicy. Also top mine with some peanut butter for the added protein, as I’m eating them for breakfast this week. I suggest almond butter as an alternative, as it is far more rich in omega 3.

But these could be just a good little snack to have on hand for the week, pop it in the microwave for about 20-30 seconds and you have yourself a nice little snack. With the banana and blueberries, it will fill you up for a little while and taste just SO good!

How to Dice an Onion Like a Pro

Being married to a chef has many perks. One of which is learning proper knife cutting techniques. I had no idea I could dice an onion so quickly, easily, and precisely.


First, cut one end of the onion, and then slice in two from the top.


 Peel, and then slice as pictured above.


 Slice from the other end once or twice, depending on the size of the onion.


 Then slice again, the opposite direction.
